Assorted seasonal vegetables (carrots, zucchini, bell peppers, etc.), 2 tbsp Olive Oil (choose your favorite flavor from our collection), Salt & pepper to taste, Fresh herbs (rosemary or thyme)

Preheat your oven to 400°F (200°C). Toss the vegetables with olive oil, salt, pepper, and fresh herbs. Roast for 25-30 minutes or until vegetables are tender. Drizzle with extra olive oil before serving for an added burst of flavor.
